Brewing coffee with the pour-over method is one of the simplest ways to brew its coffee. It requires a minimum of equipment, and if you have good coffee beans, then the result will be really good.

Here’s how to grind the coffee for your coffee funnel
A good starting point is to grind your coffee beans medium-coarse when brewing on your coffee funnel. There can be a difference in how rough you are to grind your coffee beans, depending on which coffee funnel and coffee filters you use.
Do you think the coffee is too weak in taste, then grind it a little finer. If you think the coffee is too intense and bitter, grind it a little coarser.
This is how the coffee beans should be roasted for a coffee funnel
Either coffee beans are roasted for filter coffee or for espresso. Buy those roasted for filter coffee, when using the pour-over brew method. Coffee beans roasted for espresso are suitable mainly for espresso machines and mocha jugs, and possibly. Aero Press. Within filter coffee, you can find light roasted, medium roasted and dark roasted coffee. We recommend light roasted coffee as it is usually of higher quality and provides a better cup of coffee.
Water temperature for coffee brewing
When brewing coffee, always try to hit a water temperature of 92-96 degrees. If you cannot measure the temperature, then wait approx. 2 minutes after it has cooked. Then the temperature should be around that. However, if you want to be safer, it is possible to buy an electric kettle where you can set the desired temperature.

Which filters are good for a coffee funnel?

When buying a coffee funnel, special paper filters are often included. Eg. Then the brands Hario, Kalita and Kinto all produce coffee filters that fit into their coffee hoppers. It is important not to compromise on the coffee filter, for example. to buy filters from the supermarket.
3 reasons why we do not recommend coffee filters from the supermarket for coffee funnels
- The coffee filters from the supermarket probably do not fit into the coffee funnel
- The coffee filters you buy from, e.g. Hario, Kalita or Kinto, are incomparably better than supermarket coffee filters. They are both thicker, stronger, and filter the coffee better than traditional coffee filters.
- The coffee you brew on, e.g. Hario coffee filters, are completely free of grime and precipitation, and unlike coffee filters from the supermarket, you don’t risk falling apart when you pick it up after use.
Bleached or unbleached paper filter?
There are two types of paper coffee filters for a coffee funnel.
- Bleached coffee filter
- Unbleached coffee filter
Paper in its raw form is not white, but brown. For it to turn white, it must undergo a bleaching process. The coffee filters can go through two different processes to turn white. The main ingredients of the two methods are:
Chlorine is basically the same as found in a pool, and is an old-fashioned way of fading away.
Oxygen bleaching is a natural bleaching and a more expensive method to use, but also more gentle on the environment. It is as environmentally friendly as a natural brown filter. Unlike a natural brown coffee filter, you get no impurities in the coffee. Brown non-bleached filters will always add impurities to the water. So if you have the option, always choose the white bleached coffee filters for a better taste.
Always remember to rinse your paper filter
You may have heard of it before or seen it being done at a coffee shop. First, rinse the paper filter, then brew the coffee. The reason for this is that paper can convey a slightly “papered” taste to the coffee. This is removed by wetting the filter well before starting brewing.
Here’s how you do it
- Place your paper filter in the coffee funnel and place a jug or cup under the coffee funnel.
- Pour water through the paper filter. Distribute it well until the entire paper filter is wet.
- Pour out the water you have used for this process.
- Now the filter is ready for you to brew.
Metal filter for coffee funnel
For some coffee funnels, you can buy metal filters. E.g. to Hario and Chemex. A metal filter generally gets some other things in the coffee than a paper filter does. A metal coffee filter allows several of the coffee’s natural oils to penetrate into the finished cup of coffee. The taste becomes rounder, fuller and deeper.
Coffee funnel cleaning
It is quite easy to clean a coffee funnel. After brewing your coffee, throw out the coffee filter and rinse the coffee funnel under the tap, and then you’re done. If necessary, use a mild soap or place the coffee funnel in a dishwasher.
If you are using a copper funnel, be careful with the dishwasher and detergent. Rinse the copper funnel thoroughly under the water and polish with a towel until it shines. Expect the copper funnel to the patina with time. That’s perfectly normal.
How to choose coffee beans for coffee funnel
Go for whole coffee beans
Whole coffee beans are always preferred – with no exceptions. Full stop! The reason for this is that whole coffee beans hold on to taste and aroma better. Then you can grind the coffee yourself just before use and get the most flavour out of your coffee beans.
Light roasted rather than dark roasted
Light roasted coffees are often a sign that the quality is high, and the many small flavours of good quality coffee beans have not been lost in the roasting process. A lower quality coffee bean will typically be roasted darker to hide the poorer quality and lack of flavour (though not quite espresso coffee, as espresso coffee beans, by definition, are slightly darker toasted than filter coffee). Therefore, go primarily for lighter roasted coffee. It’s a little different from the dark coffees, but there is so much to taste!
On a bag of coffee, it almost always says where it comes from. However, it is not enough to simply say ‘Colombia,’ ‘Brazil,’ Mexico etc. An area designation should be included, and any coffee farm it comes from. The rule of thumb is, the closer you can get to the place of origin, the more likely it is that the coffee will be good. If the coffee does not come from a sharply defined area, a uniform quality cannot be assured.
The roasting date is important
Coffee should preferably be freshly grilled, so look for the shake date on the bag. Unfortunately, an “expiry date” or “date of manufacture” is not enough, as it really does not tell us when the coffee is toasted. If the shelf date is not found on the bag, you are most likely to have an old coffee. A good specialty coffee should preferably be enjoyed within a maximum of 1.5 months after the roasting date, and preferably before. If the coffee gets too old, it loses too much flavour and aroma, and it is very unfortunate if you have spent USD10 on a bag of coffee.
