5 Mistakes Most People Make When Making A Cup Of Coffee!
Coffee is really just a blend of coffee beans and water – but still there are some crucial details that many of us miss and therefore end up with a cup of coffee that does not taste good. For example, do you completely check the dosage and water temperature? It’s easy to brew the world’s best cup of coffee if you avoid these typical mistakes.

There are several mistakes you can make when you want to brew a cup of the black gold, and that can actually mean that your coffee becomes both indifferent and sour.
Kenn, owns (partnering with yours truly) on a coffee shop, in the outskirts of Bangkok, has on a few occasions been called Bangkok’s best barista. He is a true coffee connoisseur and answers below, some of the most frequently asked questions about coffee he encounters that have a huge impact on how good your coffee will be.

Which coffee should I choose?
– Essentially, the first thing you need to decide is which bean to use. Many people buy several different blends, but it’s like with wine: You need to find out what taste you like and find out which area you should go for. It’s something you can talk to an expert about. One cannot say that beans from Kenya or Vietnam are the best. It is a matter of taste and it really has a big impact on your coffee. Far more important than roasting. In fact, it is completely misunderstood to look at the roasting when figuring out which coffee you like best. It means nothing. Light, medium, dark. Forget it.
Which roasting should I choose?
– Instead of looking at the last sale date, consider when your coffee has been roasted. Completely nerdy, but it`s about the coffee emitting some volatile gases and over time losing its aroma. Again, it is just like with wine: as soon as it comes in association with oxygen, it develops. If you buy espresso beans, you should ideally use them from 8 days after roasting until no later than 45 days after. For coffee it is from two to 60 days after. It should very much be on the package when it has been toasted.
How much coffee should I use?
– It is very important that you dose the coffee correctly in relation to the water. For each liter, use 65 to 75 grams. You can’t just do it on purpose if you want the best coffee. You have to weigh it. And then you only need to grind exactly what you need, because as soon as the shell of the bean is broken, the coffee is affected by oxygen, humidity and heat.
The coffee beans themselves are a wild flavor enhancer – in fact, only 1.2% of your finished cup of coffee is “flavor”, the rest is water. So don’t be dosed quite wrong until the taste gets completely wrong.
It is a classic mistake that we over- or under-dose the coffee. If you underdose and use too few beans, the coffee will taste thin and you will get a nuanced picture of the coffee’s flavors and aromas. If you overdose, the coffee, on the other hand, becomes too strong and bitter.
Solution: Be precise when measuring the amount of both water and coffee beans. A good place to start is 6 g of coffee for 100 g of water (30 g to half a liter in your plunger). Then you can adjust slightly up or down to find your own flavor favorite. You can use a kitchen scales to get the right dosage where you put the plunger on the scales and first weigh the beans, then the water.
What temperature should the water have?
– The hotter the water, the less acidic the coffee becomes. But if you get over 95.5 degrees, you scald the coffee and in return risk your coffee losing its flavors and ending up tasting mostly of ash. It happens if you for example. uses a Quooker (boiler with boiling water, ed.). Therefore, you must hit a temperature between 91.5 and 95.5 degrees so that it does not turn sour or indifferent.
Pouring boiling water over the coffee beans will make it taste bad. Beans that are dark roasted, such as espresso beans, can withstand slightly warmer water, while the lightly roasted beans are more delicate.
Solution: Let the water stand a little before pouring it over the beans. A good tip is to let the water cool down for about a minute, often enough to hit the right temperature. If you really want to nerd with the water temperature, an easy solution is to buy a small thermometer so you can see when the water has exactly reached the desired temperature. Also, always remember to brew with freshly boiled tap water, it gives the best taste.
How should I store my coffee?
– Putting coffee in the fridge is simply the biggest fad! It’s a joke and it doesn’t do any good for the coffee. This is equivalent to pulling a steak out and in of the freezer. Coffee should have as little change in packaging and temperature as possible. Therefore, it is best that you take the amount you need and the grinder just before you use it, and then close the bag. Also, do not put the bag in a can with lid. It is also a change of environment.

The coffee beans are too old!
The quality of the coffee beans is crucial to the finished cup of coffee – it goes without saying.
– If you really want to destroy your coffee, you should not buy the beans pre-ground in the supermarket. Instead, buy your coffee beans whole and as freshly roasted as possible. A good piece of advice is to look at the packaging and find the date when the coffee is toasted. The fresher, the better. In addition, it is ‘no go’ to buy coffee that has been stored in paper bags. The beans gas off – that is, all the aromas disappear.
The coffee must be packaged in a package that is hermetically sealed, preferably in plastic or foil. In addition, there must be a valve on the bag, because when the coffee is packed, it is not completely finished. The coffee should be able to breathe a little in the bag and some gases should be able to come out, but no air can enter the coffee.
Solution: Buy whole beans and invest in a coffee grinder. Grind the beans immediately before use. Then you can “nerd out”, and you really lift the taste of the finished cup of coffee. You keep the beans flavorful for the longest time by storing them in an airtight container and keeping them dark – never in direct sunlight. Never store your coffee in the refrigerator as it is too moist and the coffee may taste the other foods. After opening a bag of coffee, use it.
Extraction time is incorrect
In coffee language, the brewing time is called “the extraction time” and is thus the term for how long the coffee beans are in contact with the water to get the perfect amount of flavor into the water.
– If the coffee is brewing for too long, you pull out too many flavors from the bean and it is typically the bitter substances that come out into the water at the end of the brewing process. You would rather have the sour and sweet flavors from the beans with out and not too many bitter substances in the finished coffee.
Solution: How long the beans should last depends on the brewing method you choose. If you brew on the jug, the beans should not cover longer than 4 minutes. Put the minute clock or alarm on your phone so you know when brewing time has passed. At pour over you should have finished your brew after 3.5 minutes. It is the degree of grinding of the beans that determines the time. If the beans are painted too coarse, the water runs through too quickly and vice versa, if it takes too long to pull through, the beans are painted too fine. It can also be different from bean to bean and also depends on how old the bean is – how much it is gassed. The best advice is to play and try it out next time grind your beans.
You think it is time consuming to brew good coffee
Good coffee doesn’t have to be either complicated or time consuming!
– Many people drink instant coffee in the morning because it has to go fast, but in fact it is almost as easy to make a ‘real’ cup of coffee, on an espresso machine or whatever else you prefer. Personally i am a fanatic about my Sage Barista Express.
Coffee on a french press or pour over coffee, goes fast too! It is also fun and cozy and I can make brunch at the same time. For me, it’s about quality of life. It is a way to go into another gear and think “now I do something for myself”.
– When we have guests, I usually use the MoccaMaster, since our espresso machine, simply is too slow when dealing with 4-6 people all needing their “after dinner” coffee. It`s easy to deal with, if you have to serve coffee too many.
Solution: You can easily and quickly make a good cup of coffee – even when you are busy. Mix the coffee beans and water and brew for 5 minutes. Then you can play around in regards to how much time you have, to nerd with the coffee, to get it just the way you like it.
